The meat is washed, the whole piece is left (it is not portioned because the lamb is too fragile). And we do not want to have a dry steak, not cutting the meat all the juice will be inside the meat.
Season with salt and pepper and place the meat in a pan. The onion will be cleaned and cut into 2-3 cm pieces and put around the meat. Add a little rosemary and marjoram. Sprinkle with white wine, add a cup of water and put it in the oven first on low heat for an hour, then increase the heat to brown nicely on top.
From time to time we open the oven and sprinkle the steak. Turn the steak on both sides to brown. Remove the steak from the pan, portion it and place it on a plate.
With the remaining juice, make a steak sauce. Strain what is left in the pan, add a glass of water, a glass of white wine and 2-3 tablespoons of broth.
