We clean the beans from the ends, wash it in two quarts of water, then break it into pieces and boil it in salted water (about 30 min.)

After it boils, drain it and let it cool completely.

We prepare a little homemade mayonnaise (from a raw yolk and a boiled one + about 200ml oil_1 teaspoon mustard)

Put two tablespoons of mayonnaise over the drained beans, add salt, pepper and garlic to taste.

Sprinkle with chopped greens (fresh celery) and serve.

I heard from an acquaintance that it was somewhere in Transylvania and there the cooks prepare for the winter some preserves with all kinds of vegetables which I then put in the pot, add water and ready the soup which is also delicious. I don't say I want it to come out good soup with just a can. Ioana, this salad is super good, I often do it too !!
I suggest you try with an addition of grated carrot and two or three tablespoons of grated celery (or if it is found in RO, celery stalks, cut into cubes the middle stalk, white and crispy part)
The salad acquires a very refreshing taste.
If the beans are cut smaller, it is "spreadable" and without making a paste!

INGREDIENTS

METHOD OF PREPARATION

First put a pot of boiling water, and when it reaches boiling point, add 1/2 teaspoon of salt.

We clean the bean pods from the ends, wash them well in cold water and break them in half. We add them to the boiling water and leave them only until they penetrate easily. In about 8-10 minutes the bean pods are already penetrated. But it also depends on the type of beans.

Put the boiled bean pods in a sieve and let them drain.

Meanwhile, we make mayonnaise.

In a bowl, mix the egg yolk with the mustard, a clove of grated garlic and a pinch of salt.

We start to drip the oil and mix the ingredients vigorously until we get the desired consistency.

Towards the end, add lemon juice, to taste, 1-2 grated garlic cloves and mineral water.

Adding mineral water also reduces the taste of the oil, but also gives creaminess to the mayonnaise.

When the bean pods are cooled, chop them finely. Chop the green dill, washed beforehand.

Mix all the ingredients in a salad bowl and let the salad cool for at least 30 minutes before serving.

It is very tasty cold, from the fridge.

If we use bean pods from the jar (ready scalded) we can skip this step. I also have green beans soaked in salt water (see recipe here).

I found in the market some very tender bean pods & # 8211 fidelity type beans, also called "French". I washed it with cold water and put it in a bowl.

Usually both ends of the pods break, but in this case, it was enough to remove small portions from the tail. I don't mind "mustaches" because they are tender.

I boiled about 2 L of water with 3 teaspoons of salt. When it started to boil, I boiled the green beans. It should not boil unknowingly because it swells. Depending on the type of pod, cooking may take 5-7 or 9 minutes. It 's best to test a pod and if it' s done it 's OK! Green beans should not "squeak" in the teeth! It should be soft but have a bit of resistance when we bite it.

I prepared a large bowl of very cold water + a few ice cubes. I took the boiled green beans (with a whisk) directly into the cold water. This process stops the cooking process, preserves the color and texture of the vegetables.

After a few minutes I drained the pods well and left them in a strainer for about 10 minutes.

I cut the bean pods into the right pieces (3-4 cm).

I love simple recipes and I love pods! So today I have a very simple recipe for you, but very tasty. I made the mayonnaise at home, the quick version, at the mixer, I'll be back with the recipe soon. And because it is very hot, I invite you to cool down with a mint syrup.

ingredients

1 kg of beans
100 gr of mayonnaise
salt pepper
2 tablespoons oil

Method of preparation:

We clean the pods, we clean the tails and we break them in two. We wash them well.



Add salt and pepper to taste and mix. Optionally we can put the pods in the robot to make them paste, personally I prefer the version with whole pods.
