I know I don't put soup recipes too often, that doesn't mean I don't cook. I make soup every week because I have two scholarship holders in the house. :))

  • 700-800 g frozen pasta beans
  • 2 suitable carrots
  • 3 matching onions (250 g)
  • 1 red pepper (100 g cleaned)
  • 1/2 celery root
  • 5 l apa
  • 1 thyme branch
  • 2 lg dried leustean
  • chili flakes (hot peppers)
  • 800 ml fresh borscht
  • 50 ml cold pressed sunflower oil
  • salt
  • pepper

Preparation time: less than 60 minutes

RECIPE PREPARATION Pea bean soup:

1. Put the beans in water with a little salt and let it boil.

2. Wash and clean the onion, carrots and celery and cut them into cubes with the pepper, then put them in the soup. Put the thyme branch and let it boil for 15-20 minutes, then add the borscht and leave it for another 5-10 minutes on the right heat.


3. Turn off the heat, add the oil, larch and chili flakes. Season with salt and pepper to taste.

Transylvanian green bean soup

Let it boil for 2-3 minutes, then add the green beans. When the beans have softened, add the peeled tomatoes, cut into cubes, and the thyme. Boil for another 2-3 minutes, then adjust the taste of salt and pepper, add the crushed garlic and chopped greens. Put a tablespoon of vinegar in the soup pot. Serve plain or with sour cream.

White pea soup and food

Every year when the producers from the south of the country start to appear with the first local products, the taste of vegetables seems to be different. We always wait to see a tomato (even a solarium) of ours, to feel the difference from the green ones, brought by I know where.
And when the big, white, tender pods appear, you don't know what recipe to make faster.
This year I decided on a soup and a portion of pods made in my clay pot, still unused.

Vegetable soup with beans

Pasta, a very fresh zucchini, two peppers (also, they had a great smell), two tomatoes, four potatoes, some carrots and young parsley (flacaiandri), a piece of celery root, larch, green parsley, and an onion used only the white part).
I cleaned the ends of the pods, I cut them into strips about 3-4-5 cm, then I cut the pumpkin into cubes (being very fragile I didn't peel it), the potatoes, the peppers and the other vegetables cut with a knife. small):

I throw them in the pot, along with some oil and salt, and boil them:

To the oil, I put some thicker sunflower oil (it can be found at natural pharmacies).
Honestly, I would have put from the simple refined (oloi), which I found in the Tecuci area at oil presses, and which I always took when I went to the delta (don't imagine what the fish fried in oil in that one tastes like).

While the vegetables are boiling, I cut the tomatoes into slices (I like them bigger, almost like a salad, because that way they stay whole in the soup), and finely chop the greens):

Green, Transylvanian bean soup

Green bean soup (pods), Transylvanian with smoked is tasty, flavorful and perfect for the summer season when all vegetables are fresh. It is easy to prepare with few ingredients and is ideal for lunch or dinner with green or pickled hot peppers.

Method of preparation:
Carrot is cleaned, washed, put on a large grater.

Kaiser is cut into cubes.

Green onions are cleaned and washed well, we also keep the green leaves if they are tender.

Dried onions are cleaned, washed and chopped scales.

In a large pot I put oil, which I heated and then hardened the Kaiser to gold.

Over the kaiser ham, I added the carrot, which I hardened for 2 minutes. The hardened carrot will give a beautiful color to the soup.

I then added dried onions.

Then I added green onions. We hardened them together for about 3-4 minutes on low heat, under the lid and we stirred from time to time so that they don't burn.

In the meantime I chopped the tomato and for the taste I also chopped half a red kapia pepper.

I added the tomatoes and peppers over the mixture of onions, carrots and kaiser and I kept for another 2 minutes, during which I added Himalayan salt and a teaspoon of smoked paprika, for a deeper smoky taste.

I put the green beans in the pot (I had them frozen) and mixed well. I immediately poured 2 L of hot water and seasoned with a teaspoon of salt and half a teaspoon of dried thyme.
When the soup came to a boil, let it boil for about 30 minutes with the lid on.

We chopped the garlic, I added half of the quantity first, we don't like the taste of garlic to be very strong, so I recommend adding it according to preference and taste.

In a bowl I put the cream together with the crushed garlic (I only half the amount) and I mixed them well. I added 2-3 tablespoons of hot soup over sour cream, as in Radauti soup, to equalize the temperatures.

I poured the mixture into the soup pot and left it on the fire for another minute. I seasoned it with salt, then I put a tablespoon of apple cider vinegar and 3 tablespoons of lemon juice, I didn't want it to be sweet but not sour (sour is optional, we like it that way).

At the end I chopped green parsley.

It turned out super good and very tasty.
Green bean soup is served hot with hot green peppers.

If you prefer, you can also add vinegar and sour cream. Look how good it looks, it's full of tender green bean pods and smoked pieces.
