Hi Hello, especially for ice cream lovers, it goes well as winter in the heat, serving it. It is a recipe from bucatarianoastra.com, I have modified some ingredients.

Preparation Walnut Ice Cream:

1. First of all, put the walnut seeds in a bowl and cover with water. Allow to soak for at least 1 hour, preferably about 2. After soaking well, drain the seeds of water, which is kept separately. Put the seeds in a blender, adding 1 tablespoon of the water in which they were soaked, until a composition as fine as the texture is obtained, the consistency of a paste.

2. Cream for whipped cream mix with milk in a saucepan and put on medium heat.

3. Until the milk is hot, the whole egg and the yolks are homogenized in a bowl with the sugar and vanilla extract. When the cream milk boils, gradually pour over the egg cream, stirring constantly. Add all the walnut paste and mix thoroughly.

4. Pour the cream back into the pan in which the milk was heated with sour cream and heat on low heat, stirring constantly, only until it thickens so that if you draw a line with your finger on the back of the spoon, it will remain firm, without come back. When it reaches this stage, the cream is immediately removed from the heat.

As you can see in the image above, the base cream has fine walnut particles, if you want a very fine texture I recommend you pass the cream through a thick sieve. I don't mind the walnut pieces, I even like the slightly more rustic texture of the ice cream.

The basic cream cools completely (I put the pan in a bowl with cold water which I change a few times to speed up the cooling process), then put it in the fridge to be very cold.

Freeze either with an ice cream machine whose bowl has been cooled overnight in the freezer, or put in a covered bowl and put in the freezer, vigorously stirring the composition every 30 minutes, to prevent the formation of ice crystals.

Serve simple or with a topping of your choice, as if the caramel or chocolate flavor would suit you best. I caramelized some sugar in which I threw a few walnut kernels, I turned the hot caramel on a flat surface and when it cooled completely I broke it into pieces and added it over the ice cream.
