  • 1 large leek

  • chicken soup (made from cube)
  • butter (150 g)
  • bread croutons

Preparation time: less than 60 minutes

RECIPE PREPARATION Leek cream soup:

- Cut the leek julienne (including the green part)

- simmer in butter until soft, put the diced potatoes and then add from the chicken soup and a little water to complete. Add salt to taste. Let it boil until the leek becomes soft and pass it all with the blender, to become a creamy soup.

- put back on the fire and add a few slices of leek cut thin for appearance and add pepper and salt if needed.

- Serve with bread croutons and a little olive oil.

How do we prepare the recipe for celery cream soup with leeks?

First we wash and clean the vegetables.
In the pot in which we make the cream soup, we put the onion and the leek in oil and butter.

When the leeks and onions soften a little, add the diced celery and parsnips, salt and water to pass two fingers over the vegetables and boil them.
When the vegetables are cooked, turn off the heat and leave to cool a bit.
Strain the remaining vegetables and with a vertical blender blend the vegetables, gradually adding the remaining soup until you reach the desired consistency.
Then add sour cream, pepper, salt if needed.
It is served with croutons, toast, I used the toast.

If you want to fast, do not use sour cream and butter.

For a more special taste, you can put on top, when serving, a few thin slices of raw leeks, grated celery or slices of garlic pan-fried and made like chips.

Leek cream soup

Leek cream soup is a very tasty soup that is prepared quite easily and quickly and with few ingredients. For extra flavor, I added a little smoke to the plates. In the past I also prepared onion or lentil cream soup. All are tasty and easy to prepare.

Ingredient:

  • 1 large leek
  • 3 medium potatoes
  • 25 g butter
  • 200 g smoked
  • 1 tablespoon sour cream
  • 50 g oil
  • salt

1. First cut the leek into rounds (including the green part with leaves) and leave it to harden in hot oil for about 7-8 minutes. Stir occasionally.

2. Then add the diced potatoes and a cup of water and let it boil until the potatoes are well cooked.

3. Pass the hot potato mixture with leeks with a vertical mixer (make sure there is enough soup, the soup should not come out too thick). Add salt to taste and butter and mix well.

4. Fry the smoke a little, cut it into small pieces and put it in each plate. We serve our leek cream soup with toast. It is very tasty. Enjoy your meal!

Baked pepper cream soup

Ever since I discovered cream soups, I can say that I am a big fan of them at the expense of traditional soups. They are simply made much faster, do not waste so much time in the kitchen and can be so good that I never get tired of making them or eating them.

The other day I was up to my Hungarian neighbors and being hungry, I went into a restaurant with the thought of eating something fast and leaving. They look like the bill on the road doesn't match the one in the restaurant :))

I took the menu and in the “menu of the day” section I came across this baked pepper cream soup and honestly I'm not sorry at all, on the contrary! Slightly sweet and spicy, with a smoky taste from baking peppers, I halted it all, because instead of the main course, which didn't seem to be lost either, that is, a duck leg with red cabbage puree, fondant and sauce of cherries, I asked if another cream could be made and of course the second one came. I left happy and got home, baked the peppers and got to work. What came out, you can see during the recipe.

Cream of sweet potato soup with coconut milk and crispy bacon

Ingredient:

  • 2 kg red bell peppers
  • 100 g of garlic
  • 300 g yellow onion
  • 150 g butter with at least 82% fat
  • 50 g of tomato paste
  • 250 g white potatoes
  • Salt and pepper to taste
  • Unfermented sour cream for serving

Method of preparation:

Bake the peppers and clean them from the seed house and peel.

Peel the garlic and onion. We cut the onion into juliennes.

Heat a saucepan in which we put the butter, onion, garlic, a little salt and heat them well over low heat until lightly caramelized.

Add the chopped bell peppers, potatoes and sauté for another 10-15 minutes until the potato is almost cooked.

Put 2-2.5 l of water or vegetable soup, tomato paste and boil until all vegetables are well softened. We taste salt and pepper.

Put everything in a blender and mix until you get a fine and homogeneous cream.

We pour hot in bowls and serve with cream, I also put some basil leaves and I did well that they gave an excellent taste.
